Mrs. Bell's Green Beans, White Potatoes, and Smoked Turkey


 

What You'll Need:

  • Oven 350 degrees F (Optional)

  • (Bake in oven OR simmer the turkey in a large pot with lid)

  • Roasting pan cover with foil (optional)

  • Large pot with lid

  • Foil




Ingredients:

  • 2 pounds fresh green beans (tips removed)

  • 1+1/2 pounds white potatoes (cut into 1 inch)

  • 1+1/2 pounds smoked turkey necks OR turkey wings

  • 4 tablespoonfuls butter (*optional)

  • 4 tablespoonfuls olive oil

  • 2 teaspoonfuls Good Seasons Dry Italian Dressing OR (may substitute 1 teaspoonful each onion AND garlic powder)

  • 1 medium yellow onion (chopped)

  • 1 medium green pepper (chopped)

  • ½ red pepper (optional)

  • 2 cups vegetable OR chicken stock

  • 1 can cream of celery soup OR cream of mushroom with roasted garlic (optional)




Instructions:

  1. Peel and quarter potatoes and soak in water; cut the ends off the fresh green beans and set aside

  2. Rinse and pat dry smoked turkey wings OR turkey necks; then place in a large pot with about 2 cups of water and cover with a lid and simmer on low to medium for about 1+1/2 hours (until done)… if needed add more water to prevent sticking

  3. Remove the wings and set aside to cool; once cool enough to handle, remove the meat from the bone and set aside; (save the juice in the pot)

  4. In a separate pan add 2 tablespoonfuls each olive oil and butter and sauté onion, peppers until tender; then remove from the pan and set aside

  5. In the wing pot with the juice stir in 1 teaspoonful Good Season's Dry Italian Dressing, the canned soup, and the stock on medium heat; bring to a boil

  6. Stir in the potatoes and the green beans and ½ the onion and peppers mixture; return to boil

  7. Then add the meat and the rest of the onion and peppers; stir well and cook about 30-45 minutes (until green beans and potatoes are tender) lightly stir frequently to prevent sticking!

  8. Enjoy
